A lot of the tallow marketed today is just clarified beef fat, which is a far cry from true tallow. Tallow is a specific fat that comes from rendering and clarifying beef suet. This special fat, which surrounds the kidneys, has a different texture and melting point than other beef fat. Our tallow is the real deal-- from 100% Randall Lineback beef suet. We shave, render, and clarify it. Due to its high smoking point, tallow is especially well-suited to high-heat cooking, whether burgers, steaks, or vegetables. Use it as a substitute for any other cooking oil- the flavor is mild and a bit nutty.
Although our tallow will arrive frozen, tallow is a shelf stable product and can be stored at room temperature (although we recommend refrigeration for the best longevity).
