This Turkish and Armenian inspired salami is made of pure Randall Lineback beef (in a pork casing). It foregrounds the round, rich notes of Urfa Biber, a mild pepper known for its jammy-meets-sour, salty-meets-sweet flavor profile. Painstakingly cured over the course of a month, it also features fenugreek, Hungarian smoked paprika. The flavor is warm, complex, and inviting.

No need to remove the casing. Simply slice thin and enjoy. For something a little different: shave or grate over a salad for a little umami kick.
