Sausages - Cooking Basics
Mastering the basics of cooking sausage—whether grilled, pan-seared on the stovetop, or cooked in your favorite recipes—is all about bringing out their rich, savory flavor while keeping them juicy. With simple techniques, you can enjoy perfectly cooked sausages every time, ready to pair with sides, sauces, or just on their own.

Directions

Stovetop

Heat 1 tbsp oil in a sauté pan over medium heat. When shimmering hot, add sausages. Cook, turning frequently. 9-10 minutes for sausages containing pork fat (French Country, Butifarra with Leeks, Aged Cheddar, etc.). All beef sausages (our Spicy Rosemary recipe) are leaner. Start with high heat to sear for about 4 minutes, then lower heat to medium low and finish for another 5 minutes or so.

Grill

Timing all depends on how hot your grill is! Use stovetop instructions above as a guide.

In Sauces, Rice Bowls, Lentil Bowls, etc.

Casing On: prepare sausages according to the stovetop instructions above. Remove from heat and slice into rounds. Add rounds into your sauce, stew, rice, lentils, etc.

Casing Off: using a sharp knife, lightly slice down the length of each sausage to remove the casing. You can: 1) slice sausages into rounds to cook, 2) add sausages to a bit of hot oil in a pan to brown, breaking them up with the edge of a wooden spoon.
